In theory they can play who they like, 40 year olds whatever! However, it would appear that once the age of about 21 is reached they are moved on or loaned out.
We can offer under 21s short contracts safe in the knowledge that if they make it big quickly we can get good money for them even if they turn down a longer first team contract while also not being lumbered with players who don’t make the grade. We also get money for those if they do subsequently get sold by a later club. Over 21s give us none of that so they need to be considered quickly capable of first team play.

Does it matter? I was adding to your answer. Obviously they can play who they like of whatever age but there are good reasons why they use the B team for players under 21 beyond “we do what we want and could pick 40 year olds”.

This is perfectly straightforward. Mick Mills was joint caretaker manager of Birmingham in 1981, alongside Jim Barron. The Barron Knights released a song in 1968 called "An Olympic Record". Brazil hold the "Olympic Record" for most top three finishes. They also happen to play in yellow. Brazil's goalkeeper is called Allison, which is a bird's name. We are clearly signing a goalkeeper.

A yellowfinch is an American Goldfinch. It is, I agree highly dubious. But at least it fits the clues. Unlike some other equally far fetched suggestions
